2 Tablespoons coconut oil
4 6-ounce salmon fillets
Salt & freshly ground black pepper
Lemon or lime wedges or serving
Put a heavy skillet (cast iron if possible) over medium heat for about one minute; add the oil. Sprinkle the fish with salt and pepper. When the skillet is hot, add the fish. Raise heat to medium-high.
After 4 minutes, turn salmon over and cook until fully done, another 2-5 minutes.
Serve browned side up with the lemon or lime wedges.
