2 Eggs (large)
2 cups Milk
3 Tbsp Extra Virgin Olive Oil
1 tsp Vanilla Extract
2 ½ cups Unbleached All Purpose Flour
2 Tbsp Baking Powder (aluminum free)
1/4 tsp Sea Salt
1 Banana (large, sliced)
1/4 cup Dark Chocolate Chips
Preheat the oven to 350ºF (175ºC). Grease a 13x18 baking sheet.
In a large bowl, whisk together the eggs, milk, oil, and vanilla extract together until smooth. In a separate bowl, mix the flour, baking powder, and sea salt.
Add the dry mixture to the wet and mix until just combined, some lumps are fine. Pour the batter into the baking sheet and spread it evenly to all corners. Top the batter with banana slices and chocolate chips.
Bake for 15 to 17 minutes or until the pancakes feel spongey and look set. Cut into 12 squares and serve 2 per person.
